Nana’s Sauce and Meatball Recipe

  • Meatballs

    • ingredients:

      • 1lb of ground beef and pork

      • 2 cloves of garlic

      • 1 tsp salt

      • 1 tbls parsley

      • 2 eggs

      • 1/2 cup bread crumbs

      • 1/4 cup grated romano cheese

    • mince garlic and parsley. combine all ingredients into a bowl. Mix with hands (gotta get dirty). roll in to 1 to 2’’ diameter balls. Pan shear to brown then put into sauce to cook for a few hours. Nana' used to be dead set on keeping the balls in sauce for 24 hours to get them marinated to her liking.

  • Sauce

    • Ingredients:

      • 2-3 Large cans of San marzano whole tomatoes

      • 1/4 cup of oil

      • 1 tsp salt

      • 1 tsp sugar

      • 1/2 tsp basil

      • 1-2 Bay leaves

      • 1 Onion

      • 1 carrot

      • 2-3 cloves of garlic

    • Preparation

      • First steps are most important! Chop up onion, garlic and carrot into tiny pieces. Put lots of oil in a large pot- we use out largest Le Cruset.

      • Set temp to medium low to low and put onion in pot. Stirring occassionally let onion simmer until translucent.

      • Next, place garlic into pot. This is a step that can go very wrong. Do not step away from pot AND DO NOT let garlic burn. Cook it slowly until fragrant

      • Add in carrots. Let them get covered in oil and a little soft- not very as the time in sauce will do the majority of the breakdown

      • Add in Tomotoes, salt, pepper, bay leaves, basil and more oil if needed. Turn sauce up to medium high and cover pot. Wait until it boils. Then turn down to low.

      • Add in meatballs

      • Occasionally mix the sauce over the course of 3+ hours

      • Eat with whole family :)
